The MUST Restaurant Review
The Must is a concept wine bar and gastro pub featuring more than 50 local
and global wines destined to be a “must” visit location for wine and beer
enthusiasts. Each of our guests, wine enthusiasts and novices alike, is
treated to multiple ways of enjoying more about wine and food
pairing in a fun, energetic and customer-focused setting.
The service is excellent, and the ambiance is magic! I found an extraordinary place to enjoy a great time with my friends. I have to tell you not just because I love you,
dear Buzz of LA readers, but because I also enjoyed very much this amazing
Wine Bar & Restaurant. The Must is, well, a must and has given people
from everywhere a great reason to go to downtown Los Angeles.
Owned by sommelier and mixologist Coly Den Haan who is so brilliant she not
only got her partner and, set designer Rachel Thomas, to join her in this
venture, but to help her gut and redo the place with a spectacular
makeover in just one month. The lovely and talented Rachel's
fine aesthetic direction can be seen everywhere.
From the custom-made booths that line the perimeter, to the gorgeous back-splash behind the flirty bar, The Must is a vision. I swear on everything sacred, I want the wallpaper in the bathroom. It makes me think of lovely things. It’s not every day
that you have the pleasure of giving a restaurant all five stars. But from my
experience at The Must Bar, I should say, it was truly divine!
From the moment you walk in through the room, the staff is knowledgeable and friendly in the right way, adding to The Must an enchanting vibe. the nearly 2,000-square-foot space, which opened in late December 2008, features a wine list
with a "cheat sheet" -- one-line descriptions of the reds and whites
People who do know wine will also find something they like.
Burrata and Prosciutto
Mac & Cheese with Bacon
The menu is filled with unusual dishes that include seemingly strangely
paired flavors. All the food we tried was superb, starting from their
Burrata to their Prosciutto, it was all fantastic.
Roasted Brussels Sprouts Sautéed with Bacon and Mustard sauce
There’s the Roasted Brussels Sprouts sautéed with bacon and mustard sauce that
if you are a vegetarian, you will truly enjoy this one, especially if you drink one
of their amazing wines, you will certainly feel like heaven. Be open to the
creative selections and you will be amazed at how spot-on the Must's
culinary creators are with these ingenious combinations.
Buffalo Shrimp & Grits
Do not miss their delicious Buffalo Shrimp & Grits, three cheddar cheese grit
cakes topped with tempura buffalo shrimp & Homemade ranch dressing, I
tell you, these went so well with my Pino Nero from Torti Italy 2007.
Southern Chicken Sliders
Some perfectly unforgettable dishes are the Elbow Mac & Cheese with bacon, the Southern Chicken Sliders, with crispy fried chicken breast, smoked mozzarella,
ranch dressing & pickles on a mini brioche, this was to die for!
California Portobello Sliders
The California Portobello Sliders, again for those who prefer exclude meat from
their menu, are ideal, prepared with smoked mozzarella, sundried tomato aioli, and
caramelized onions on a mini brioche. The Must Burger was also delicious, with
freshly grounded Sirloin caramelized onions and blue cheese on an onion bun.
Chicken Pot Pie
The plates were great to be shared by 2 or more, the Chicken Pot Pie a la
Mode with wild mushrooms, root veggies & snap peas in a light cream with
a homemade biscuit and a scoop of Chevre crème fraiche was divine.
We also tried their Yo Mama Pan Seared Jidori Chicken.
Not Yo’s Mama’s Fish Sticks (Salmon)
If you love Salmon, this is a perfect dish for you; Not Yo’s Mama’s Fish Sticks, crisped fresh salmon batons with scallion grits, herbed oil & yellow bell
pepper sauce. Their prices are also
very reasonable. I felt
perfectly content without being stuffed, after dinner.
Maple Rum Bread Pudding
Mayan Hot Chocolate with Cookies
We even had room for delicious desserts like the fabulous Maple rum Bread
Pudding with spiced rum and sherry caramel glaze and their Cookies & Milk,
a homemade Scottish shortbread cookies & Mayan Hot chocolate.
